COMBINE sugar and water in a large stainless steel saucepan. Bring to a boil over medium-high heat, stirring occasionally. Reduce heat and boil gently, stirring to dissolve sugar, about 5 minutes. Add cinnamon sticks, cloves and apple rings and return to a boil. Reduce heat and boil gently, stirring occasionally, until apples are slightly tender, about 15 minutes. Remove from heat.
REMOVE apple rings from syrup using a slotted spoon, and place in a large bowl. Return syrup to a boil over high heat. Remove from heat and stir in brandy. Add back apples and stir gently until apples are completely coated in syrup.
To treat apple slices to prevent browning, submerge cut apples in a mixture of 1/4 cup lemon juice and 4 cups water. Red or green food colouring added to the syrup will enhance the appearance.
